Superfood Acai Bowl

Because who can afford to spend $10 every time you want an Acai Bowl?!

I love this recipe because you can substitute whatever super food veggies you have on hand, you can play around with nut-butters and even your juices! This recipe is also great to make in bulk and throw some extra acai bowls in your freezer for a hot day!

Ingredients / Equipment:

  • 2 packets of acai

  • 2 bananas (preferably frozen)

  • 1 cup frozen berries

  • 2 stalks of celery

  • 2 small carrots

  • 2 sprigs of kale

  • 1/4 cup peanut butter (or any nut butter)

  • 1/2 cup Greek yogurt

  • 2 TBSP chia seeds

  • 2 TBSP hemp seeds

  • 1 cup of juice or water

  • handful of ice

  • Granola

  • Honey drizzle

  • Fresh fruit toppings

Instructions:

Pack everything in your blender and blend on high for about 1 minute until everything is blended together.

Pour contents in to a bowl, top with granola, some fresh fruit and a drizzle of honey!

This typically makes 4 servings. We eat 2 when they’re ready and throw 2 in the freezer.

Have fun with this recipe and throw whatever veggies in you have on hand, experiment with your liquid, change up the nut butters, add protein powder. You can even use things like beet greens, chard, carrot tops! Citrus! Avocados! Ginger! Turmeric!
