quick & easy breakfast tacos

I’m a taco fan of all sorts and breakfast tacos are one of my favorites! Enjoy and have fun with your greens and veggies!

Prep time: 10 minutes // Cook time: 10 minutes // Total: 20 mins // Serving size: 2

Ingredients / Equipment:

4 eggs, beaten

3 sprigs of kale, chopped

4 strips of bacon, chopped

1/2 white onion, chopped

1 small yellow squash, diced

1 clove garlic, minced

4 tortillas

handful of cilantro, chopped

1/2 avocado, sliced

your favorite hot sauce

pickled onions

Instructions:

On medium-high heat, cook your bacon to your desired crispness. Keep bacon fat in the pan. Add your onions and garlic to the pan and sautee for 2-3 minutes. Next, add in squash and combine with onions. Cook until tender. Add in your kale and cook down.

Gently stir in your beaten eggs and cook until eggs are cooked through. Warm-up your tortillas!

Build your tacos with your filling. Top with sliced avocado, pickled onions, cilantro and your favorite hot sauce!

Notes:

Add some cheese if you’re feeling like it.

You can also omit the bacon and make this a vegetarian recipe. If so, you’ll need to add 1 TBSP of EVOO to cook your veggies.
