Epic Granola

I don’t know about you, but man, I am so sick of all of the sugar and processed things you find in your average granola. Even the “healthy” options! Don’t get me wrong, there are some good ones out there, but sometimes nothing beats homemade granola.

This recipe is inpsired by The Sprouted Kitchen, with our Epic twist!

Ingredients / Equipment:

  • 1/2 cup EVOO

  • 2/3 cup pure maple syrup

  • 3/4 tsp sea salt

  • 1/2 tsp cardamom

  • 1 tsp cinnamon

  • 3 1/2 cups old fashioned oats

  • 2 cups crispy rice cereal (I like brown rice)

  • 1/2 cup raw sunflower seeds

  • 1 cup raw pepitas

  • 3 TBSP chia seeds

  • 3 TBSP hemp seeds

  • 1/4 tsp vanilla bean powder (or extract)

  • large mixing bowl

  • baking sheet

  • foil

Instructions:

Preheat oven to 325, cook on middle racks. Line your baking sheet with foil.

Mix olive oil, maple syrup, sea salt, cardamom and cinnamon in bowl.

Add the oats, crispy rice, pepitas, sunflower seeds and chia seeds. Mix to coat.

Spread granola thin on baking sheets stirring every 15 minutes to ensure even crispness.

Total bake time- 45 minutes.

PS- Most of the time I make a double batch! It keeps well in the cupboard for one month.
