Roasted Shiitake & Basil Hummus

Hummus is so easy and doesn’t have to be overly complicated! We made a traditional hummus base and blended in some roasted mushrooms and basil at the end. It’s to die for!

Prep time: 10 minutes // Cook time: 10 minutes // Total: 20 minutes // Serving size: 6-8

Ingredients / Equipment:

1 cup of shiitake mushrooms, sliced

2 TBSP balsamic vinegar

1 can of garbanzo beans

1/4 cup fresh lemon juice

1/4 cup tahini

2 cloves of garlic

4 TBSP EVOO, plus more for serving

2-3 TBSP water

1 cup of basil

Instructions:

In a medium saute pan, heat up 2 TBSP of EVOO and saute your mushrooms for 3-5 minutes. Add your balsamic vinegar and cook down until they have a nice sear on them. Remove from heat.

In your blender, add garbanzo beans, lemon juice, tahini (make sure you stir it up really well!), garlic and remaining EVOO. Blend on medium until smooth. Here you’ll add your water, by the TBSP to help in mixing it up. Once you have your hummus to the consistency of your liking, add your mushrooms and basil and blend for another 10-15 seconds.

To serve, spoon your hummus into a bowl. Drizzle some EVOO on top and add a couple of roasted mushrooms. Serve with your favorite dipping veggies or crackers.
