Stone Fruit Salsa

My husband has a food sensitivity to nightshades— mostly tomatoes and potatoes. So I always try to make a fresh fruit salsa so he doesn’t have FOMO about not getting to eat a real salsa. I’ve actually come to enjoy them myself! When Jared shared his apricots with us, I knew a salsa was in order!

Prep time: 15 minutes // Cook time: 15 minutes // Total: 30 minutes // Serving size: 2

Ingredients / Equipment:

8-10 apricots, diced

1 small red onion, diced small

1/2 jalapeno, diced small

1/4 cup cilantro, chopped fine

2 TBSP lime juice

2 cloves garlic, minced

Salt + pepper to taste

Mixing Bowl

Instructions:

Add all ingredients into mixing bowl and stir evenly!

We recommend letting this sit for 2-4 hours before you want to serve to make sure all the flavors meld together.

Notes: 

Have fun with different fruit! We’ve done mango before, strawberries, you could even use corn!
