Beer Battered Lion’s Mane + Cauliflower Tacos

This is an EPIC beer batter recipe that is light, crispy and can really be used on any kind of veggie or protein!

Have fun with your toppings! Use whatever taco fixin’s are your favorite!

Ingredients / Equipment:

  • 1 1/2 cup flour (sifted)

  • 12 oz beer (use something local! We used Modern Times Fortunate Islands)

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • 1/2 tsp cumin

  • 1/2 tsp fresh cracked pepper

  • 1 1/2 tsp oregano

  • 1 1/2 tsp salt

  • 2 cups Lion’s mane, cubed

  • 1 cup cauliflower, florets

  • 4-6 tortillas

  • 1 avocado

  • 1 radish

  • cilantro

  • pickled onions

  • shredded cheese

  • 4 cups of oil (vegetable, canola or sunflower will work)

  • large mixing bowl

Instructions:

Combine flour, beer, garlic powder, paprika, cumin, pepper, oregano and salt in mixing bowl and stir until mixture is blended without lumps. Keep batter cold until ready to use and refrigerate in between frying batches.

Heat fryer oil up to 375 degrees in medium pot. Toss a handful of mushrooms and cauliflower into the batter and generously coat. Pull out of batter and gently place into the hot oil. Let fry until golden brown. Repeat for how many ever batches you’re making!

Warm tortillas, place fried Lion’s Mane and Cauliflower in tortillas and top with avocado, pickled onions, shredded cheese and cilantro!

PS- We also made a sauteed mushroom version too for folks interested in that! We sauteed 1/2 lb of oyster mushrooms with 2 TBSP EVOO, some garlic and salt and pepper.
